Banania Moitshoki
As we get ready to launch our long-awaited cookbook, packed with our guests’ most requested recipes from our private canvas camps, we’re taking a moment to celebrate the incredible people who bring the magic to life on safari.
And now, on to the spotlight:
Our Botswana culinary operation is run by the talented Banania. Her kitchen is the heart of camp, all the crew (a highly efficient group that’s been working together for many years) are delighted to help her out with any ‘foody’ tasks that need doing.
Everything required for a safari is sourced in Maun before the trucks head out into the bush. On preparation day, the team loads the tents and equipment while Banania checks her kitchen boxes making sure all necessary ingredients are packed. She’s a master at this as once in the wilderness, the only way to source anything forgotten is by calling for a resupply drop on the HF radio, which can be a logistical nightmare.
Banania’s favorite dish is bobotie – ‘I love the balance of sweet and savory!’ She enjoys decorating the plates and making her dishes look visually appealing as Banania says, “The first thing diners do is eat with their eyes”.
Growing up in Shorobe near Maun, Banania started work as a nanny in 1989 but soon moved to the Okavango Delta. Her safari career started in a camp laundry room, then progressed to assisting waiters lay tables for meals. She displayed a keen interest in becoming a chef and was moved up to scullery where she started helping to prepare meals. Showing considerable potential, she was chosen to train as a chef and has gone from strength to strength.
Today, she continues to expand her skills, attending chef courses and pre-season refreshers. Her dedication and talent help ensure that every meal in camp is something special — made with care, character, and just the right touch of spice.
